Chef James specialties include Cajun staples such as jambalaya, gumbo, cajun spice chicken wings, cajun spiced pulled pork sliders, chicken sauce piquante with polenta, corn maque choux, bread pudding and much more! All options are available Gluten Free, Dairy Free, and Vegetarian as well. Chef’s partner, Stephanie Morein from New Orleans, is baking and creating all of the ‘Southern Sweet Treats’ on the truck. We are excited to bring our home style healthy Cajun cooking to the Colorado food truck scene! Chef James brings the flavors of his home town, Baton Rouge, to JIMBEAUX’S authentic cajun cuisine.
